Any one have Recepies of south indian vegetrian dishes with no or little oil?

Update:

No micro wave, No idlys, but side dishes with masala and vegetables, chillies but no oil. my doctor advised me not to take any kind of oil or coconut and i does n't like non cooked vegetables

    Most vegetables can be steamed cooked and then mixed with species prepared in measured amount of oil and stirred well let it stay in refrigerator overnight warm and eaten any time.

    If you have microwave, most vegetables(1pound) takes about 5 minutes at high power to cook thoroughly with 1 or 2oz of water added to it. Reduce the amount of water if you like your vegetable dry.

    You will put less time to check it and then add 1/2 minute more till done. This mainly dependens on the power of your oven. You do not need to keep over night but by keeping it over night you are letting the vegetable absorb the species.

    It may be worth trying to mix everything togather and cook completely in the water, in a Microwave without adding any oil or butter. Try it in small quantity. Experiment, you will be surprised. After a while one gets used to slight taste deference.

    Vegetable just steamed in microwave has very good flavour, and it is very healthy. I add slight Salt while eating at the table, taste best if eaten right away warm.

    Most recipes taste about same with less oil then call for and one cannot tell the deference if one has not eaten it before. So you can take any standard recipes and cut down on the oil or cook it in water without oil, try a little bit at a time to see how it tastes.

    Try "Roast Potato Curry"

    Very small potatoes-1 kg, red chillie powder - 1 1/2 tsp, salt - 1 1/2 tsp, .Boil the potatoes whole in a pressure cooker and peel. Add salt, red chillie powder and mix lightly and leave for5 minutes. Heat oil in a fry pan, add 1 tsp mustard seeds.when it pops, add 1 tsp urud dal and add the peeled whole potatoes(Don’t mash).Fry for a little while(Do not cut the potatoes when frying).Add 1 small chopped tomato, 1 small chopped onion(if preferable) and a bunch of curry leaves, coriander leaves and fry evenly until it is fully roasted.In the end add a tsp of kari masala powder.

    Idlis and other steamed foods are good examples of south indian vegetarian dishes with little or no oil.You only need a drop of oil to coat the idli moulds.You can add carrots,cabbage and peas to the batter to make nutritious idlis.

    You cud try rasam sambars both dont have much oil. stir fry beans in a little of oil with salt and when cooked add some grated coconut. carrot can also be cooked this way. u shd be able to find reciepes of rasam and sambar on the internet

    only one method steam cook the veg, then take 1/2 tsp oil put mustard seeds ,urad dal ,chana dal, curry leaves, whole red chilly fry utill roasted add steam cooked veg add grined greenchilly,ginger garlic to taste,with salt. less oil food takes long time to cook but once we get use to it it comes out well.it it my experience. i use very less oil or no oil in some recipes

    Chappathi,Adai,chutneys,Tandoori -fish ,chicken kabab,soups etc .......all veg fries with little oil
