Wow, that's a big question...Well, there are certainly a few French classics, but it depends on the season. Many of them are time consuming and involve the making of sauce, a French specialty.
If I had to pick one meal it would go like this:
Escargot (sauteed snails in garlic and butter)
Salad Nicoise (greens with egg, potatoes, olives, tomatoes and tuna)
Entree would have to either be Duck l'orange (seared duck breast in orange sauce) or coq au vin (wine braised rooster)
Desserts--endless choices.
Of course there are many many more great French dishes, but these I would say are the most popular classic dishes.
BTW, I'm a former chef.

A sous chef is as Scott Mauldin so succinctly explained...but if he (the Chef) belongs to a certain tribe of Native Americans, I suppose you COULD call him a Sioux Chef. Equally important is the use of proper spelling, punctuation, and word usage...for example: "What is a sous chef? I mean, I know it's important, and I've heard it all the time, and I've always wondered.. thanks for the help!"
